lobster fra diavolo
Ingredients:
3-4 lobster tails, removed from shell & cut into 1/2 inch pieces
1 yellow onion, small dice
4 garlic cloves, sliced
1 28 oz can whole plum tomatoes
1-2 Tablespoons chopped Calabrian peppers (depending on your preferred spice level)
1/4 cup dry white wine
1 pound spaghetti
About 1/3 cup reserved pasta cooking water
Fresh basil
Fresh parsley
Fresh oregano
Salt & pepper, tt

Add about 2 Tablespoons of olive oil to your pan on medium heat. Before the oil starts to heat up, add the garlic to the pan. This allows the garlic flavor to infuse through the oil, adding so much flavor!
After the oil has heated up & garlic becomes fragrant, add the lobster & cook for a couple minutes. After lobster is cooked, remove from pan & set aside.
Add the onion & cook for a couple minutes. After onion becomes translucent, add the Calabrian peppers & cook for a minute or so.
Add the white wine to deglaze pan. Allow to simmer for a minute. Add the tomatoes & crush with spoon. Add some of the fresh basil & oregano. Season with salt & pepper.
Allow to simmer on medium heat for about 30 minutes or so. Sauce should have thickened.
Cook your pasta according to packaged directions. Remember to save a bit of that pasta cooking water!
Lower heat to low & add the pasta cooking water along with the lobster.
Add the pasta to the pan & stir until pasta is coated with the sauce.
To serve, garnish with some fresh parsley & basil if desired. Enjoy!
