2 flounder filets
1 pint cherry tomatoes, halved
1 small onion, sliced
2 garlic cloves, sliced
6 sprigs fresh thyme
6 leaves fresh basil
1/4 cup dry white wine
1 tablespoon butter
1/2 tablespoon dried Italian seasoning
1 teaspoon garlic powder
Salt & pepper, tt

Preheat oven to 400 degrees. In an oven safe dish, add the onion, tomatoes, garlic, 3 sprigs thyme, 4 leaves fresh basil, EVOO, some of the Italian seasoning, salt & pepper.
Roast for about 25 minutes or until the tomatoes have burst & created a sauce. Lower heat to 350 degrees & add the white wine. Allow to cook for another 5 minutes.
While tomato & wine sauce are finishing in the oven, season both sides of fish filets with salt, pepper, garlic powder, & Italian seasoning. Preheat a non stick pan on medium heat. Sear the fish on both sides, about 2-3 minutes per side or until golden brown. Add the butter & 3 sprigs of fresh thyme & allow butter to melt.
To serve, spoon tomato sauce over fish & garnish with some fresh basil if desired. Enjoy :)
