Ingredients:
1/2 pound pasta
3 hot Italian sausage, casing removed & crumbled into smaller pieces
1 yellow onion, sliced
2 bell peppers, sliced to about the same size as your desired pasta shape
3 cloves garlic, minced
14 oz can of tomatoes (I used baby Roma)
1 Tablespoon Italian seasoning
1 teaspoon crushed red pepper (optional)
About 1/4 cup reserved pasta cooking water
1/2 Tablespoon EVOO
Salt & pepper, tt
Fresh basil
Add the oil & sausage to your pan on medium high heat. Cook until sausage becomes golden brown & mostly cooked through.
Lower heat to medium. Add the peppers & onions. Allow to cook for about 5 minutes or until peppers slightly soften & onions become translucent. Season with salt, pepper & Italian seasoning.
Add the garlic & allow to cook for about 2 minutes.
Add the canned tomatoes & a few leaves of fresh basil. Season with crushed red pepper, if desired. Allow to simmer, slightly covered for about 30 minutes. Taste for seasoning throughout.
Cook pasta according to packaged directions. When pasta is done make sure to reserve some of the pasta cooking water. Add the pasta cooking water to the sauce & simmer for another minute or so.
Combine the pasta & sauce. Stir until coated. To serve garnish with some more fresh basil & grated cheese if desired. Enjoy!!
